Mini madeleine

I have been on a hunt for a beautiful, minimal, nicely photographed, but not least packed with delicious recipe patisserie cookbook for a long a time. AND I think that I found it. This is a Hungarian cookbook ‘Édesem süteményei’. Unfortunately it does not come in any translation.. .yet.

But I thought that I share with you a recipe from the book. Ever since I have seen these cute looking cookies I wanted to try them, just needed a good recipe…SOoo as the first tryout from my newly beloved cookbook was these gorge MADELEINES. What’ya think?? ALSO they are easy to make, taste heavenly and only have to be in the oven for about 8 minutes…Can it get any better than that??

 

RECIPE for the Pistachio mini madeleine with lemon icing

WHAT YOU WILL NEED

For the madeleine

  • 3 eggs
  • 120 g granulated sugar
  • 20 g honey
  • 1-2 drops of orange blossom water
  • 130 g flour
  • salt
  • 8g baking powder
  • 120 g melted butter
  • 10 g + 5g salted pistachio (peeled and grounded)

For the lemon icing

  • 1 tbsp powdered sugar
  • 1-2 drops of lime juice

 

HOW TO MAKE

Madeleine

1.Using an electric mixer whisk the eggs with the sugar and honey until it is about 3 of the size, thick and plane, then add the orange blossom water ¦ 2. Cautiously mix together with the flour, salt and baking powder ¦ 3. Add the butter as well, and mix it in ¦ 4. Add the 10 g pistachio to the batter. ¦ 5. Put the batter into the fridge for overnight ¦ 6. Next day start with preheating the oven to 190 degrees, prepare the madeleine baking mold (I used a silicon one and was satisfied with it), if you are not using silicon, butter and flour the mold. ¦ 7. Filled in the mold equally ( don’t put much too much mixture in it, as they are going to grow while in the oven) ¦ 8. Bake it for about 8 minutes (if you are using a mini mold it can be even less), wait a few minutes for cooling, before you take them out from the mold

Lemon icing

1 Mix the powdered sugar with a little bit of lemon juice (add just a few drops of juice at a time) ¦ 2. put a tsp of the icing on top of the madeleine and sprinkle with the grounded pistachio

Eat them while they are warm, or dip it into coffee or tea equally delicious!..VOILÁ!
